This goes perfectly with my recipe for chicken fajitas, but it’s so good I could sit and eat it on its own.

1 large, ripe avocado
8 cherry tomatoes
4 large spring onions
A bunch of coriander
Peel and chop the avocado into chunky pieces and chop the tomatoes into 4 or 8, depending on your preference. Place in a bowl.
Finely slice the spring onions and add them to the avocado and tomatoes.
Squeeze over the juice of a lime and finely chop the coriander, adding it to the rest of the ingredients.
Stir together and set aside whilst making the rest of your Mexican feast, or serve with tortilla chips and get stuck in!
