The beginning

I’ve been trying to start this blog for several weeks but so far all I’ve managed to upload are the photos on my Instagram page! So, now that interviews, Supperclubs and holidays are out of the way I finally have time to share my food with you.

Last week I returned to work after having a fab holiday in Dubrovnik and one thing I didn’t realise Croatia was good at is making ice-cream. Wow, it’s amazing, it certainly rivals the Italians, and I had the pleasure of sampling one Tiramisu flavoured and one coconut flavoured with chewy coconutty pieces.

As much as I enjoyed overindulging I’m more than ready to return to my regular eating habits which involved a trip to the supermarket today to fill some very empty cupboards!

This morning 2 of my 10 a day came from breakfast, which was Banana and pear overnight oats , using the only fruit left in my flat. I mashed the banana and stirred it into milk soaked oats this morning to give my breakfast a creamy flavour and texture.

Lunch today was a cauli & turmeric super-veg salad, courtesy of pret-a-manger in Nottingham, after helping my boyfriend buy stock for his bar. I easily managed 3 of my 10 a day with cauliflower, courgetti, cucumber, edamame beans, pickled cabbage, spinach and peas accompanied by cashews, brown rice and red quinoa.


For dinner this evening I made chicken fajitas with homemade guacamole at least another 3 of my 10 a day. This dish is so easy to make, full of flavour and packed with veg. Johnny (my boyfriend) followed it up with a fruit salad of pineapple, black grapes and cherries with coconut yogurt helping me easily reach 10 out of 10 today.
